What the Kale?


This is a sneak peak into what you can make with Kale! Of all the super healthy greens, Kale is the KING! It is definitely one of the healthiest and most nutritious plant foods in existence. I don't always eat as well as I should, so before you turn your nose up at eating "healthy" know that I am not the perfect example, either. I had a great veggie bowl for lunch, but now I really want some chips and dip! So go figure. I'm trying!

1- Kale is an excellent source of Vitamin C, containing about 4.5 times as much as spinach.
2- It can help lower cholesterol, which may reduce the risk of heart disease.
3- Kale is one of the world's best sources of vitamin K, which helps prevent osteoporosis.
4- There are numerous cancer-fighting substances in Kale.
5- Kale should help you lose weight, unless you're adding it to brownies and eating half the pan! 


All right, I admit it, I added that last part! But the website I looked at did mention the first part of that statement. Kale is low in calories and does contain small amounts of protein and fiber, which helps you lose weight.

Sausage Zuppa Toscana Soup
(4-6 servings)

Ingredients from Thrive Life:
1/4 C Freeze Dried Onions
1/2 C Sour Cream Powder
2 T. Veloute' Sauce
1 T. Chicken Bouillon
1/2 Cup Kale
1 Cup Instant Pinto Beans
3/4 Cup Sausage Crumbles
1 Cup Dehydrated Potato Chunks

1/2 tsp Garlic Powder
1/4 tsp Crushed Red Pepper (Optional)
Directions:
To cook in a pot, dump all ingredients of this jar into a pot. Add 7 cups of water. Bring to a boil, turn down to medium heat and let simmer for about 20 minutes, or until potatoes and beans are tender.

To prepare in a crock pot, add soup to 7 cups of water and cook on low for 4 hours. Serve with freshly grated Parmesan cheese and bread sticks.

The ingredients in this recipe need no refrigeration, so make it in a quart jar or another air-tight container and take it with you camping or in the RV. If you're not going anywhere, which is really OK, simply make it up for dinner at home.
